The first one will allow you to see all messages, but they will remain on the server, while with the second protocol, all email messages will be downloaded onto the device where the email account is created, unless you explicitly select a copy to be left on the server. Thus, you can choose if you would like all your electronic communication to be stored on a single device, or if you would rather be able to see the email messages from various places.
